My mama’s nanner pudding!

Good evening. Hope all of you are doing well. Had a very long day at work today, and am just now getting around to opening my laptop and catching up.

The holidays are coming, are you ready? I’m getting there, but so many things to do. I’m trying to make a lot of Christmas gifts this year. Our family has done this for years, but even more so this year, due to economic situations. Besides, we need to get back to the real meaning of Christmas.

One of the things I have to do is planning food for the Thanksgiving holiday. We always have our traditional turkey and dressing, and my mama’s nanner pudding is right at the top! Hope you enjoy it as much as I do.

PUDDING:

Vanilla wafers

3-4 bananas, sliced

1 pint heavy whipping cream, whippedsassypantsstudio.blogs...

1 large box of instant vanilla pudding

1 can sweetened condensed milk

MERINGUE:

3 egg whites

1/8 tsp  cream of tartar (or may substitute salt if desired)

1 tsp vanilla

6 – 8 tbsp. sugar

Turn oven to broil.

Place wafers in bottom of 13×9 inch baking dish. Cover wafers with the sliced bananas. Whip the heavy whipping cream till soft peaks form. Set aside.  Mix pudding according to directions on package, except use the sweetened condensed milk in place of the whole milk. (If not enough sweetened condensed milk, then finish out the rest with the whole milk). Fold whipped cream into pudding mixture until well blended. Pour over the bananas and wafers.

MERINGUE:

Whip egg whites until foamy. Add the cream of tartar and vanilla. Start whipping and add sugar one tablespoon at a time. (If you add all at once or too quickly, it will be grainy). Whip until peaks hold their form.

Spread meringue over pudding, making sure to take meringue all the way to edges, and touching sides of baking dish.

Place pudding with meringue in oven. Take care to leave oven door ajar, and watch carefully. Being on broil meringue will brown quickly and burn. When meringue is a caramel brown color, remove pudding and let cool. May also sprinkle crushed vanilla wafers on top if desired. Enjoy!

This has always been a favorite. My mom has been gone many years, but her “nanner pudding” lives on.
