Sweet Potatoes

Finally, sorry the blog is so late today. Long day at work, and then onto ladies’ bible study. So here we go….

I wanted to share another wonderful recipe that my mama made during the holidays. It’s Sweet Potato Pie, and let me tell you, it is out of this world.

This is enough for two deep dish pies

4 large sweet potatoes, baked, peeled and mashed (easiest way to bake them is in the microwave)

1 1/2 cups sugar (or to taste)

1  tsp vanilla

1 tbsp. pumpkin pie spice (or to taste)

4 eggs

1/4 cup butter

2 deep dish pie shells

Bake, peel and mash the sweet potatoes. Combine all other ingredients with the potatoes. Pour into pie shells, and bake at 350 degrees for 20 minutes; check to see if a knife inserted in the middle of pie comes out clean. If not bake another 15 minutes and check again. Bake at 10 minute intervals from this point until knife comes out clean. Top with Cool Whip.

Nothing says holidays to me quite like my mama’s “Tater Pie”.

On another note, I am in the process of making a quilt for my new grand daughter due in December. But it’s not a traditional quilt. It is a no sew quilt. Almost finished, but not quite. So stay with me, pictures and instructions will follow in the next few days.
